A crock pot works for the tortillas. They aren't pretty, but maybe
you could wrap a miniature Mexican blanket around it.

You'll have to use chafers of some sort to keep the meat hot,
either that or serve at a prescribed time. Fajitas don't really lend
themsleves to long buffets, but they can be done. I'd also
suggest that you switch to beef fajitas instead of chicken ones, as
chicken slices will dry out much more quickly.

You're also going to need either chafers or crockpots for the
beans and the rice. Most of this stuff can be rented, which is the
good news. the bad news is the $$$. Try to find ones that have a
water bowl under the serving bowl. this will help to prevent
sticking to the bottom of the pan and drying out the bottom of the
beans and rice.

The easiest part of your menu will be the pico de gallo. Just keep
that one in the fridge, covered. Also you're going to need
guacamole. I'f found that if I use a product called "Fruit Fresh"
in mine, it keeps it from turning brown on me. All that ballyhoo
about leaving the seed in, is bogus and it doesn't work. Not if
you really have to make it early in the day.
