New Years Eve Party/fajitas for a crowd!!

We are planning a New Year's Eve bash/husband's 40th and I need
HELP!!! I would like to have a fajita bar at around 10 pm but
wonder how I am going to make it work...I have a super recipe for
chicken fajitas and Mexican rice, but don't know how I can keep it
hot or reheat it without having it dry out---should I use chaffing
dishes or just warm it in the oven, and how in the world can I keep
a bunch of flour tortillas fresh and warm without getting hard? Any
suggestions--PLEASE!!! Thanks...
