Recipe: New York Apple Cake (using whole wheat flour and oat bran)

NEW YORK APPLE CAKE

2/3 cup sugar
1/2 cup packed brown sugar
1/4 cup vegetable oil
3 egg whites
2/3 cup all-purpose flour
2/3 cup whole wheat flour
1/2 cup oat bran
1 1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
3 cups shredded unpeeled apples
powdered sugar (for garnish)

Preheat oven to 350 degrees F. Spray a 13x9x2-inch baking pan with non-stick coating and set aside.

In a large mixing bowl combine sugars, oil and egg whites. Beat with a wooden spoon until well blended. Add flours, oat bran, baking soda, cinnamon and nutmeg; stir until just moistened. Stir in shredded apples. Pour batter into prepared pan.

Bake in a 350 degrees F oven for 25-30 minutes. Cool, if desired, sift powdered sugar over cake.

Makes 16 servings
