CHOCOLATE CAKE OR CUPCAKES
2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup oil
2 cups sugar
2 eggs
3/4 cup unsweetened cocoa powder
1 teaspoon vanilla
1 cup milk
1 cup black coffee
Preheat oven to 350 degrees F. Grease 2 (9-inch) cake pans or grease or paper-line 24 cupcake tins.
Sift together flour, baking powder, baking soda and salt. Set aside.
Mix together in this order: oil, sugar, eggs, cocoa powder, vanilla and milk. Add flour mixture and coffee alternately to the sugar mixture, stirring to blend. Divide batter between prepared cake pans or cupcake tins.
Bake at 350 degrees F about 25 minutes for the 9-inch cakes or about 20 minutes for cupcakes.
Makes 2 dozen cupcakes or 2 (9-inch) cakes
