Recipe: No-bake Carob Balls

Misc.

Ellen - I do not think this is exactly what you wanted (no fruit) but I found it on the Web and decided to go ahead and post it. I would think you could easily add dried fruits (possibly by reducing the quantity of peanuts). Hope it helps.

CAROB BALLS

1/2 cup peanut butter (plain or chunky)
1/2 cup carob powder
1/2 cup honey
1 cup toasted wheat germ
1 cup chopped peanuts (or other nuts)
1 tsp vanilla extract (optional)
unsweetened shredded coconut

Mix together everything except the coconut. Form into walnut-sized
balls with wet hands. Roll in coconut and put onto a waxed-paper lined
cookie sheet. Refrigerate till firm. Store in the refrigerator or
freezer in a plastic bag.

Makes about 36
