HEALTHY MAKE-OVER MEDITERRANEAN SAUSAGE AND LINGUINI
12 ounces dry whole grain linguine
1 pound mild Italian lean turkey sausage, casings removed if necessary
1 teaspoon minced fresh garlic
1 Tablespoon minced fresh shallot
1 (14.5 ounce) can no-salt added diced tomatoes
1 (8 ounce) can no-salt Added tomato sauce
1 Tablespoon dried basil (or 3 tablespoons fresh basil)
1/16 teaspoon crushed red pepper
1/8 teaspoon salt
1/4 teaspoon freshly ground black pepper
Fresh basil leaves for garnish
Cook linguini (in non-salted boiling water) according to al dente package directions. Drain.
In a large, heavy nonstick skillet, over medium heat, cook sausage, breaking sausage into small pieces with a wooden spoon. Cook until no longer pink.
Add garlic and shallot, saute for 1 minute.
Stir in tomatoes with juices, tomato sauce, herbs, crushed red pepper, salt and pepper. Simmer about 5 minutes.
Divide pasta evenly among four pasta bowls. Top with sausage mixture. Garnish with fresh basil leaves. Serve hot.
Makes 4 entree portions
