Recipe: No Chopping Vegetable Soup (crock pot)

NO CHOPPING VEGETABLE SOUP

2 cups beef broth
1 (16 ounce) can kidney beans, rinsed and drained
1 (14 ounce) can stewed tomatoes, undrained
1 (10 ounce) package frozen mixed vegetables
1 (10 ounce) package frozen pearl onions
1 pound boneless and skinless turkey breast, sliced into thin strips*
1 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 cup crushed tortilla chips (optional, for serving)

Combine all the ingredients in a slow cooker.

Cover; cook on low 8 or 9 hours or until the vegetables are done.

If desired, sprinkle each serving with crushed tortilla chips.

*Strips of beef or pork can be substituted for the turkey.

Makes 8 servings
