Recipe: Braised Short Ribs of Beef (Sears crock pot recipe, 1970's)

BRAISED SHORT RIBS OF BEEF

2 tablespoons bacon fat or peanut oil
3 pounds short ribs, cut in chunks
1 clove garlic, crushed
2 cups sliced onions
1 cup chili sauce
1/2 cup vinegar
1 teaspoon curry powder
1 1/2 teaspoons paprika
1 tablespoon brown sugar
1 cup beef stock
1 teaspoon salt
Freshly ground pepper
1/2 teaspoon dry mustard

Heat fat or oil in a skillet and brown the meat well on all sides. Remove to crock pot.

Add onions and garlic to the skillet and brown them lightly. Place over meat in crock pot.

Mix remaining ingredients together well and pour over meat and onions in crock pot.

Cover and cook on #2 (low) setting 9-10 hours, until ribs are very tender.

Makes 4 servings
