I have made this pumpkin pie many times.
I created it in response to the occasional crack in pumpkin pies.
Using the Famous Pumpkin Pie Recipe from the Libby's canned pumpkin label;
Add to the recipe:
1 additional egg
1/8 - 1/4 cup instant mashed potato flakes
You can try varying amounts of flakes, depending on how humid it is where you are.
I like to whisk the flakes into the milk & eggs and when it is completely incorporated, blend this into the pumpkin and add the remaining ingredients.
The texture is absolutely perfect, you cannot detect the additional ingredient by taste. It binds the filling and keeps it from splitting or cracking when cooked.
I needed to think of a way to increase the density and bind my pumpkin pies, as I always live where it seems to be quite humid and the oven inmy home is often inconsistent in temperature - resulting in cracked filling!
Try it - this pie comes out firm enough to eat by hand as soon as it is just warm. Wonderful!
