Recipe: Popeye's Red Beans and Rice (repost)

POPEYE'S RED BEANS AND RICE

1 cup uncooked Uncle Ben's long grain rice
2 cans (1 lb. each) red chili beans in chili gravy
1 tsp chili powder
1/4 tsp ground cumin
Dash garlic salt
Chili seasoning mix (optional)

Cook rice according to package directions.

In saucepan heat beans without letting it boil. Stir in chili powder, cumin and garlic salt.

When piping hot, spoon chili mixture into 6 small dishes, adding a few tablespoons of hot, cooked rice to each serving. Season with chili seasoning mix, if desired.

Makes 6 servings
