Recipe: Barbecue Beef on Corn Muffins

BARBECUE BEEF ON CORN MUFFINS

1 pound lean ground beef
1 (14 1/2 ounce) can diced tomatoes in juice
1 (11 ounce) can Mexican-style corn, drained
1/2 cup bottled barbecue sauce
1 1/2 teaspoons chili powder
4 purchased or homemade corn muffins, cut in half
1/3 cup chopped fresh cilantro

Heat a large, nonstick skillet over medium-high heat. Add ground beef; cook for 3 minutes or until no longer pink, breaking up clumps with a wooden spoon.

Stir in tomatoes, corn, barbecue sauce and chili powder. Bring to a simmer; cook, uncovered, 5 minutes to develop flavors.

Meanwhile heat broiler.

Place muffins, cut sides up, on a baking sheet.

Broil 1 to 2 minutes, until lightly toasted.

Stir cilantro into beef mixture; remove from heat. Spoon beef mixture over toasted muffins.

Servings: 4
