Oatmeal Cookies
I hope you enjoy these as much as we do, they have been in our family for years. People that say they don't like oatmeal cookies tend to like these.
Makes about 5 dozen cookies
1 1/4 cups unsifted flour
1 teaspoon baking soda
1 cup real butter
1/4 cup sugar
3/4 cup firmly packed brown sugar
1pkg. (4 serving size) vanilla instant pudding
2 eggs
3 1/2 cups quick rolled oats
1cup raisins (optional)
Mix flour with baking soda. Combine butter, sugars and pudding mix in large mixing bowl; beat till smooth and creamy. Beat in eggs. Gradually add flour mixture then stir in oats and raisins. Drop by rounded teaspoons onto ungreased baking sheets about 2-inches apart. Bake at 350F for 10-12 minutes. Remove cookies from sheets after letting cool for 2 minutes or they will stick to the pan; put on cooling rack.
Date Roll
These are so much better than they sound on paper and are really easy to make. They are always on our Christmas goody list or we feel cheated, HA!
1/2 lb.dates (chopped very small)
1/2 lb.marshmallows (cut up in very small pieces)
1 cup English walnuts
1/2 cup heavy cream
1/2 lb. graham crackers (crushed)
Mix dates and marshmallows with walnuts and heavy cream (more can be added if too dry but should be stiff). Shape into a log-roll. Put graham cracker crumbs onto waxed paper and roll log in it. Wrap the log in waxed paper rolled tightly around it then wrap again with aluminum foil around the waxed paper. Refrigerate a few hours or overnight. Unwrap log and cut into very thin slices to serve.
