APPLE-COCONUT BAR COOKIES
1 cup oil
2 cups sugar
2 eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3 cups diced apples
1/2 cup chopped nuts
1/2 cup coconut or raisins
Preheat oven to 350 degrees F. Grease a 15 1/2x10 1/2x1-inch jelly roll pan.
In a large bowl, combine the oil, sugar, eggs and vanilla. Add flour, cinnamon, baking soda and salt. Stir in apples, nuts, coconut or raisins. Mix well. Spread batter in prepared jelly roll pan.
Bake at 350 degrees F for 45 minutes or until tests done.
