Recipe: Okra Fritters

OKRA FRITTERS
1 c. thinly-sliced okra
2 Tbsp. flour
1/2 tsp. salt
1 Tbsp. milk (if needed)
1/4 tsp. pepper
Okra must be sliced thin as a dime.
Put okra in bowl; season with salt
and pepper.
Sprinkle flour on the okra and stir
to coat slices. Press with back of
spoon or hands so that juice from
okra will give a binding liquid
and mix with flour.
Drop by tablespoon into hot fat.
Turn often as they burn easily. Serves 2.
