PINEAPPLE BREAD
1/3 cup sugar
1/3 cup vegetable oil
2 eggs
2 cups all-purpose flour
1 tablespoon baking powder
1 cup crushed pineapple in juice, undrained
Preheat oven to 350 degrees F.
Beat together sugar, vegetable oil and eggs. Add flour, baking powder and pineapple with juice. Mix well. Pour into oiled 9-by-5-inch loaf pan.
Bake 50 to 55 minutes, or until toothpick inserted into center comes out clean. Cool in pan 5 minutes on wire rack. Remove from pan. Cool completely before slicing.
Makes 12 servings
