Recipe: OLD German Cottage cheese pie

For German Cottage Cheese Pie

1 1/2 c. cottage cheese 3/4 c. sugar
2 tbsp. flour 1 tbl. spoon butter melted
2 tbsp. cream 1/2 tsp. vanilla
3 eggs (seperated) 1/4 c. currants
1/2 tsp. lemon rind salt to taste if needed

Put cheese through collander (or food processor) adding salt to taste (if needed this was a recipe written before you bought your cottage cheese). Add flour and cream mixing well. Seperate eggs. Beat the yokes lightly, adding sugar and butter. Mix with the cheese. Add currants and lemon rind, lastly add the beaten egg whites.
Place this mixture in a pie plate which has been lined with cookie dough ( or you can use reg. pie crust).
Bake in moderate oven (350*) for 1 hour or until bottom crust is well browned.
** can be topped with cinnamon and or nutmeg to top for added taste ( in place of the currants, you could add any type of chopped fruit or jam to your taste)
