Recipe: Rainforest Cafe City of Gold Pasta (bow tie pasta with 3-cheese cream sauce)

3 tbsp. butter
1 cup heavy (whipping) cream
1/3 cup crumbled feta cheese
1/4 cup (1/4-inch-diced) buffalo mozzarella*
4 tbsp. grated Parmesan cheese, divided use
1 cup uncooked bow-tie pasta
Kosher salt, to taste
Freshly cracked black pepper, to taste
GARNISHES:
1 large Roma tomato, peeled and diced into 3/4-inch pieces
2 tbsp. of 1/4-inch sliced green onions
In a medium saucepan, melt butter, add heavy cream and heat well. Add the feta, mozzarella and 2 tablespoons Parmesan, stirring often and heating just until cheese melts.
Prepare pasta according to package directions. Drain pasta and add to cheese mixture; stir to coat well. Salt and pepper to taste.
Garnish with tomatoes, green onions and the remaining 2 tablespoons Parmesan.
*Regular mozzarella may be substituted.
Makes 1 huge serving
