OLIVE GARDEN'S ZABAGLIONE LAMPONE
8 egg yolks
1/2 cup raspberry liqueur
2 tablespoons raspberry syrup
1/4 cup sugar
1 cup heavy (whipping) cream, whipped, divided use
2 cups raspberries, divided use
1 tablespoon grated semisweet chocolate (for garnish)
Whip egg yolks in top of double broiler (upper pan should not touch hot water in lower pan). Add liqueur, syrup and sugar, stirring until smooth or candy thermometer reads 165 degrees F.
Cool until below 40 degrees. Fold in all but 1/2 cup whipped cream and 1 cup raspberries. Mix well.
Fill the inside of large red wine glasses with mixture. Garnish top with remaining whipped cream, remaining 1 cup raspberries and sprinkle with grated chocolate.
Makes 6 servings
