Recipe: Spinach Salad with Berries and Almonds (with dressing using raspberry jam)

Salads - Assorted
SPINACH SALAD WITH BERRIES AND ALMONDS

6 cups baby spinach
1/2 cup crumbled feta or goat cheese
1/3 cup sliced almonds, walnuts or pecans, or a mix)
1 cup fresh raspberries (or strawberries)
FOR THE DRESSING:
2 tablespoons raspberry vinegar
2 tablespoons seedless raspberry jam
1/2 teaspoon Dijon mustard
1/2 teaspoon raw honey or agave nectar, to taste

In large bowl, combine spinach, feta or goat cheese, nuts and berries; set aside.

In small bowl, whisk together vinegar, jam, mustard and honey or agave nectar.

TO SERVE:
Drizzle dressing over top of the salad and toss gently to coat. Serve immediately.

Makes 4 servings
