FLUFFY LEMON WHIP
1 (4-serving envelope) low-calorie lemon flavored gelatin*
1 1/4 cups boiling water
1/2 cup Carnation Instant Nonfat Dry Milk crystals
1/2 cup ice water
2 tablespoons lemon juice
Dissolve gelatin in boiling water. Chill mixture in refrigerator until consistency of unbeaten egg whites.
Mix instant milk crystals with ice water in small mixer bowl. Whip until soft peaks form (3 to 4 minutes). Add lemon juice and continue beating until stiff peaks form (3 to 4 minutes longer). Fold into gelatin mixture. Pour into small serving dishes.
Chill in refrigerator until serving time.
*Change flavor by using other flavors of gelatin.
Makes 4 cups
