Menus Orange Marmalade and Honey Glazed Carrots
I thought this one up off the cuff the other night while I was wondering what to do with the orange marmalade and blossom honey we got in a citrus gift basket.
In a medium saucepan over med/high heat melt:
1 tbsp. butter
Stir in:
2 tbsp. orange marmalade
1 tbsp. honey
1 tsp. balsamic vinegar
a dash of dried thyme
pinch of dried parsley
Add:
1 package baby carrots
1/3 cup orange juice
pinch of salt and pepper to taste
Cover and simmer until carrots are crisp-tender. Remove lid and keep simmering over low/medium heat until sauce reduces. Season to taste (I was wishing for some summer mint).
