Debbie, this may not be the recipe you are looking for but perhaps you could work with this one (adding mushrooms etc) until you find the one you are looking for.
OVEN BEEF STEW
2 lbs. boneless beef stew meat
8 med. potatoes, quartered
8 carrots, quartered
6 med. onions, quartered
1 (1 lb.) can tomatoes
3 tbsp. minute tapioca
1 tsp. salt
1 tsp. thyme
Place meat, potatoes, carrots and onions in a roaster with lid. Add tomatoes, tapioca, salt and thyme.
Place lid on roaster. Place in a 250 degree F oven and bake 5 hours.
