RED ONION'S PINEAPPLE SALSA
1 (20 ounce) can pineapple chunks, with juice
1 to 2 teaspoons corn oil
1 tablespoon cilantro (I added more cilantro than this because I love cilantro and 1 tbsp. isn't much)
Juice of 1/2 lime
1/4 jalapeno, or to taste (I added 1/2 fresh jalapeno, then went back and poured in some of the juice from a jar of jalape os because it wasn't spicy enough for my taste)
Salt to taste
Splenda (this was listed as optional in the recipe, but it does really bring out the pineapple flavor to add a packet or two of sweetener)
tortilla chips (for serving)
Combine all the ingredients, except the salt and Splenda, in a blender or food processor. Pulse twice or until the salsa is chunky.
Season to taste with salt and with Splenda if the pineapple needs additional sweetness. Serve with chips.
