Recipe: Gordon's Succulent Soy Sauce Chicken (Live with Regis and Kathie Lee, 1990's)

GORDON'S SUCCULENT SOY SAUCE CHICKEN

This recipe is also great with pork, veal, and beef ribs!

1 whole chicken
FOR THE MARINADE:
1 cup soy sauce
1 tbsp. dry mustard
1 1/2 tsp. ground ginger
1 tsp. ground white pepper
5 cloves garlic, crushed
1/2 cup peanut oil

Mix marinade ingredients in a closed container, refrigerate at least overnight.

Marinate chicken in sauce 1 hour before roasting.

Cover chicken with foil and roast for 30 minutes at 400 degrees F.

Remove foil, add 1/2 cup water and reduce heat to 375 degrees F. Baste chicken every 20 minutes, adding water to the pan as needed. Continue roasting until skin is brown and crispy, and chicken is done. Total cooking time is 1 1/2 to 2 hours.
