Recipe: Oven Fried Eggplant (Betty Crocker, 1980's)

OVEN FRIED EGGPLANT

1/2 cup dry bread crumbs*
1 teaspoon salt*
1/4 teaspoon ground black pepper*
1 egg
1 small eggplant (about 1 pound), peeled

Heat oven to 375 degrees F. Grease jelly roll pan (15 1/2 x 10 1/2 x1-inch).

Mix crumbs, salt and pepper together; set aside. Slightly beat egg in a shallow bowl; set aside.

Cut eggplant into 1/2-inch slices. Dip slices into egg, then coat with crumbs. Arrange in pan.

Bake uncovered 15 minutes; turn and bake 15 minutes longer or until browned and tender when pierced with a fork.

*Or substitute Italian seasoned bread crumbs for bread crumbs, salt and pepper.

Makes 4 servings
