Recipe(tried): Pam: BLT(Bacon,Lettuce)Stuffed Tomatoes

Pam, I have no idea if this is the recipe referred to, but
never posted, from Aug. '98. This one I have made & really
enjoy. It's a little putzy, but good.

BLT - Bacon & Lettuce Stuffed Tomatoes

20 cherry tomatoes
1/4 C chopped green onion
10 slices bacon, cooked & crumbled (see my note at end)
1/2 C finely chopped lettuce
1/3 C mayonnaise
salt & freshly ground pepper

Cut off the top of each tomato. Scoop out the pulp & seeds.
(a melon baller works well for this). Salt the inside of each
tomato & invert tomatoes on paper toweling. Drain for 15 min.

In a small bowl, combine remaining ingredients. Fill each
tomato with mixture.

Don't stuff these until an hour or two before serving and keep
refrigerated until serving.

Note: Being a sometimes lazy (I prefer "time saving") cook, I
tried this with some convenience ingredients. The first time, I
used Hormel "real" bacon bits, which are of a softer nature. OK,
but I would try it with Baco's for more crunch. Also, if you fry
bacon, I would fry it a little crisper than normal, as these
have a tendency to get soggy & I like a little crunch in my BLTs.
I'd also use a little less onion than the recipe calls for, I
used a little less than the 1/4 C. and I would reduce a bit more.
Again, it's a matter of taste.
