Recipe: Papaya Salad with Thai Dressing (blender or food processor)

PAPAYA SALAD WITH THAI DRESSING

FOR THE THAI DRESSING:
1/4 cup peanut oil
1/4 cup rice vinegar
1 tablespoon chopped onion
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon chopped hot red chile pepper
1/4 teaspoon ground ginger
FOR THE SALAD:
2 firm papayas (about 1 pound each), peeled, seeded and cut into 3/4-inch dice
1 pound firm tomatoes (3 medium), seeded and cut into 3/4-inch dice
1/2 cup fresh cilantro leaves
FOR SERVING:
2 cups arugula leaves (or torn tender salad greens)
1/4 cup roasted cashews

Combine all ingredients for the dressing in container of electric blender or food processor and blend or process until smooth.

Combine papayas, tomatoes, cilantro and Thai dressing in large bowl; toss gently to coat thoroughly.

Arrange arugula leaves on 6 salad plates. Top with papaya mixture, dividing equally. Garnish with cashews.

Makes 6 servings and 1/2 cup dressing
