HARVEST GOLDEN SALAD
1 (3 oz) pkg orange-flavored gelatin
1 cup boiling water
1 (8 oz) can crushed pineapple, undrained
1 cup grated carrots
1/3 cup shredded Cheddar cheese
1/3 cup mayonnaise or salad dressing
1/4 cup chopped pecans
Dissolve gelatin in 1 cup boiling water.
Drain pineapple, reserving juice. Add enough water to pineapple juice to make 3/4 cup liquid; stir in gelatin mixture. Chill until consistency of unbeaten egg white.
Fold pineapple and carrot into thickened gelatin. Pour into a 10x6x1 3/4-inch pan, and chill until firm.
Combine cheese and mayonnaise; spread over gelatin, and sprinkle with pecans.
