Recipe: Pashka

Here is a recipe from Cooking Alaskan,by Alaskans. Enjoy an authentic recipe from St.Paul Island.
Pashka
1 lb cottage cheese
pinch of salt
1/4 c butter
1 egg, beaten
1/3 c sugar
1/2 c whipping cream
3/4 c crushed pineapple, drained
1/4 c chopped nuts
1 t vanilla
Drain cottage cheese. Add pinch of salt. Soften butter and combine with sugar, stirring until mixture is smooth. Add egg and continue beating. Add cheese. Whip the cream and stir it in. Add drained pineapple, nuts and vanilla. Wet a piece of cheesecloth and put it in the bottom of a colander or strainer. Pour in cheese mixture. Gather up ends of cloth and twist to remove excess moisture. On top of the cheese put a saucer with a heavy object in it to continue draining and firming. May be kept overnight or up to 2 days in refridgerator. Slice and serve with Kulich. Usualy made on Good Friday to serve on Easter Sunday.
