Recipe: Finnish Miners Pasties with Meat Filling and Apple Filling
SandwichesMINERS PASTIES WITH MEAT FILLING AND APPLE FILLING
"Given to me by my Finnish father, this recipe was a favorite' all- in-one' lunch for Finnish miners. The meat is at one end and the dessert at the other! These are great to pack for hikes or picnics." - Nancy Perkins
FOR THE DOUGH:
1 cup shortening
1 1/4 cups boiling water
1 teaspoon salt
4 1/2 to 5 cups all-purpose flour
Bacon grease (for brushing tops before baking)
FOR THE MEAT FILLING:
3 slices bacon, diced
3 small potatoes, diced
1 carrot, grated
1 small onion, diced
Salt and pepper to taste
FOR THE APPLE FILLING:
4 medium apples, peeled, cored, and diced
2 tablespoons sugar
2 teaspoons all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
Mix the shortening with the boiling water and salt. Add just enough flour to make a stiff dough. Chill 60 minutes.
WHEN READY TO BAKE:
Preheat the oven to 350 degrees F.
On a floured surface, roll pieces of dough into 4 1/2 inch circles; set aside.
For the meat filling, combine the bacon, potato, carrot, onion, and a little pepper and salt in a bowl.
For the apple filling, combine the apple, sugar, flour, cinnamon, and salt in a separate bowl.
TO ASSEMBLE THE PASTIES:
Put 1 tablespoon meat filling on one side of the circles of dough, and 1 tablespoon apple filling on the other side. Raise the edges of the dough, and pinch them together. Put the pasties pinched-side down on a greased baking sheet, and pat into the shape of a finger roll. Brush the tops with bacon grease.
Bake 60 minutes.
Makes 20 to 24 pasties
