Recipe: Pat.................

Misc.
I don't like collards, so I don't cook collards. However, my mama and daddy loved them so she cooked them often. I don't remember her ever cooking any frozen ones, but I'll give you the recipe for the fresh kind.

MRS. PALMER'S COLLARDS

1 bunch of collards, washed thoroughly
2-3 strips of bacon
salt
1/2 tsp. sugar

Place the strips of bacon in a large pot. Let the bacon cook slowly. This bacon will be the oil in the collards. While the bacon is slowly sizzling, trim the collards. Discard the tough stems. Chop the leaves finely. Wash the collards again. Put the collards into the pot with the bacon. Add salt and sugar. Toss the collards in the pot so that the leaves will be coated with the bacon fat. As water as needed. Cook for 40 minutes or until the collards are done to your liking.

Pac, I would follow this recipe just substituting frozen collards for the fresh kind.

I hope that this helps!
