Recipe: Pea and Lettuce Soup

Pea and Lettuce Soup
1/2 cup parsley sprigs
1/2 small head Boston lettuce
2 cups chicken broth
1 can peas (about 2 cups)
1/2 cup cream
Salt and freshly ground black pepper
Croutons
Cut lettuce into pieces. Place parsley, lettuce, 1/2 cup chicken broth, and peas, undrained, in the container of an electric blender. Run on HIGH speed 15 seconds or until vegetables are pureed.
Turn into a saucepan; add the remaining broth and simmer 5 minutes.
Add the cream and season to taste with salt and pepper. Serve garnished with croutons.
