Recipe(tried): Salmon with Sour Orange and Tonight's Meat Loaf Dinner Menu - Popping in here before I go to the gym to say the sour oranges are here!!
MenusThe other night I baked some just plain old regular frozen salmon fillets with a sprinkle of sea salt, Italian herbs, and a big squeeze of sour orange. From frozen, at 350 for 1/2 hour. They were delicious, really livened up by the sour orange. I have done the same with other (tres boring) white fish, also cooked from frozen. Those sour oranges really breathe new life into those ho-hum fish fillets!
Tonight for dinner we are having something I have literally not made for years...meat loaf! We're not much for red meat, but I guess we have it maybe once a week. I am trying to get through to the bottom of my freezer stash, and I came upon a huge (5 lbs. plus) package of lean ground beef. I will be making two meat loaves; one "regular" (Italian seasoning), and one Tex-mex, with corn and chili seasoning. My kids love anything Tex-mex! The other couple of pounds of beef I will cook up and re-freeze for spaghetti sauce, I suppose.
With this I will be serving Gina's green bean recipe, with bacon and onions, and green beans from last year's garden. Baked potatoes with sour cream, yummy! And Roasted Tomato Soup. I roasted the tomatoes before, they were also "found" in the freezer, already roasted as per the recipe (a previous post of mine), along with a couple of containers of stock.
Yesterday, I picked up some sterilised soil...it is time to start my tomato seedlings. I had about 10 grape tomato plants; this year I will have maybe 8, plus I picked up a package of yellow plum tomatoes, which my DH adores. The taste, to me, is nothing exciting, but they do look real purty in a salad.
Well, I have to go and cut my son's hair before I go to the gym. I try to get these guys to go to the barber, but they like the way I do it better, I guess, because I have cut everyone's hair this week, one more to go!
Have a grrrreat day off, everybody, back to the salt mines tomorrow!
