Recipe: Chicken tortilla soup (more like Claim Jumpers)

CHICKEN TORTILLA SOUP (LIKE CLAIM JUMPERS)

1 small rotisserie chicken
2 pounds large tomatoes, chopped
2 medium jalapenos
1 medium onion, chopped
1 tablespoon chopped cilantro
2 teaspoon chopped green chilies
1 tablespoon chopped garlic
6 cups chicken stock or canned chicken broth
1 (10 oz) can enchilada sauce
1/4 cup heavy cream
2 tablespoons butter (or margarine)
1 teaspoon Worcestershire Sauce
1 tablespoon ground cumin
2 tablespoons chili powder
1/4 teaspoon celery salt
Wondra quick-mixing flour "sauce & gravy" (for thickening"
1 cup corn tortilla, cut in strips (the thinner the better)
4 tablespoons vegetable oil

Saute onions in a large saucepan in oil until transparent.

Add tomatoes and cook, stirring until tomatoes are softened. Cool and then put in blender with cilantro, green chilis, jalapenos, chopped garlic, chili powder and cumin puree in blender or food processor until a smooth consistency is reached.

Remove skin from chicken, separate white meat from bone and tear into 1 to 2-inch strips.

Put all ingredients in soup pot, except tortilla strips. Simmer; stirring occasionally, about 30 minutes add Wondra flour occasionally until desired thickness is achieved.

Fry tortilla strips in vegetable oil, be careful not to leave in too long or they will burn.

Add tortilla strips and Serve.
