Recipe: Pork Scallopini and Pork Scallopini with Mushrooms

PORK SCALLOPINI

1 lb. pork tenderloin
1 egg, slightly beaten
1 tbsp. water
1/2 cup dry bread crumbs, finely crushed
1/4 tsp. salt
1/4 tsp. onion powder
1/8 tsp. garlic powder
1/8 tsp. pepper
2 tbsp. butter

Cut pork diagonally into 1/2 inch slices.

Mix egg and 1 tablespoon water.

Mix bread crumbs, salt, onion powder, garlic powder, and pepper.

Toss pork with egg mixture. Coat with crumb mixture.

Heat 2 tablespoons butter in 12 inch skillet over medium heat until hot. Cook pork in butter about 8 minutes or until done.


PORK SCALLOPINI WITH MUSHROOMS

1 1/2 lbs. pork tenderloin, sliced about 1 inch thick*
1/2 cup flour, sifted
2 tbsp. butter
2 tbsp. oil
1/2 cup sherry
1/4 cup water
1/2 cup chopped onions
1 clove garlic, minced
1/4 tsp. black pepper
1 tsp. salt
1/4 tsp. each thyme, rosemary, oregano
2 cups sliced fresh mushrooms

Dredge pork in flour.

In a hot skillet, brown meat in butter-oil combination.

Stir in sherry, water, onion, garlic, pepper, salt, herbs. Cover and cook slowly 30 minutes, adding a little water if needed.

Add mushrooms and cook, covered 15 minutes longer.

*This recipe can also be used with veal, but reduce cooking time significantly.
