PEANUT BUTTER ROLL
4 cups white sugar
1 cup white Karo corn syrup
1/2 cup water
pinch salt
3 egg whites
peanut butter (I use Jiff)
Mix top 4 ingredients in heavy saucepan. Boil until hard ball stage-250 to 265.
Beat egg whites until stiff.
Pour boiled portion in egg whites. Beat until bread dough gloss is gone.
Roll on buttered waxed paper (makes 2 rect.) Roll thin. Let stand until a little firm, so you can spread peanut butter over top. Roll up. Cut into slices.
Store in airtight container. (I put more peanut butter on one less on the other one. how much peanut butter on the roll is up to you.)
My husband is from KY and his family made this every year at Christmas. I got this recipe from his sister. I love recipe and everyone that tries it loves it too. There is a fake recipe like this, that you use mash potatoes to make the cooked portion. Once you try this recipe, you'll not like the taste of the other one.
