Recipe: Mackinac Fudge (Gloria Pitzer, 1980's)

MACKINAC FUDGE

Like the famous fudge shops of the Mackinac Island fame, but so creamy and rich!

3 squares (1 ounce each) unsweetened baking chocolate
1/2 cup butter (8 tbsp), divided use
2 tbsp light corn syrup
1/4 cup hot black coffee
1 tsp vanilla
6 tbsp butter or margarine
6 cups powdered sugar

Melt chocolate with the 2 tablespoons butter and corn syrup in microwave or on stove over medium-low heat. Stir till smooth.

Beat in coffee, vanilla, the remaining 6 tablespoons butter and powdered sugar till smooth, using electric mixer on medium speed.

Spread evenly in greased 9x9-inch pan. Chill about an hour or till firm enough to cut into squares.
