Recipe: Peanut Butter-Sandwich Cookies (McCall's Great American Recipe Cards, 1971)

1 1/4 cups sifted all-purpose flour (sift before measuring)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter or regular margarine, softened
1/2 cup chunk-style peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar, firmly packed
1 egg
1 (16 1/2 oz) can chocolate frosting
Sift flour with baking soda, baking powder, and salt. Set aside.
In large bowl, with electric mixer at medium speed, beat butter with peanut butter. Add sugars gradually, beating until light and fluffy. Beat in egg. Add flour mixture. Beat at low speed, until well combined. Refrigerate dough, covered, until chilled - about 1 hour.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F.
With tablespoon, shape dough into balls, about 1 1/4 inches in diameter. Place, 3 inches apart, on ungreased cookie sheets. Flatten with fork, making crisscross pattern so cookies are 2 1/2 inches in diameter.
Bake 10 minutes, or until lightly browned. Let stand a few minutes, then transfer to wire rack to cool completely.
Put cooled cookies together in pairs with a rounded tablespoon of chocolate frosting.
Makes 16 sandwich cookies
