Recipe: Peggie-(no fruit fruitcake)Gates'Black

Maybe this is something you could use:
(These are for mini loaves, but I'm sure you could make larger
ones)

Gates' Blackberry Jam Cake

3/4 lb dates, cut up
1 1/2 lb raisins
3 C pecans
3/4 C bourbon
9 large eggs
3 (10 oz) jars blackberry jam
1 1/2 C (3 sticks) butter or margarine
3 C sugar
1 1/2 tsp baking soda
3/4 C buttermilk
4 1/2 C flour
1 tsp salt
1 T nutmeg
1 T cinnamon

Soak dates, raisins & nuts in bourbon for several hrs or overnite.
Grease & flour 13 mini loaf pans (Disposable tins measure 5 3/4 x
3 1/4 x 2 in). Preheat oven to 275 deg. F.

Blend sugar & butter in food processor or electric mixer. Beat in
eggs & jam. Combine dry ingredients in large bowl; mix baking soda
& buttermilk.

In overly large bowl, perhaps a punch bowl, combine flour, jam &
milk mixtures thoroughly. Add fruit & nut mixture.

Fill each loaf tin about 3/4 full. Stagger on 2 shelves in oven.
Perhaps switch some partway during baking). Bake for 1 1/3 hrs.

Leave in disposable tins to store. Sprinkle each with about 1/2
T bourbon every few days to keep moist & "age") Keep in plastic
bags or sealed tins.
