Recipe(tried): Pickled Veggies

Pickled Veggies
3# pickling (pearl) onions
14 carrots
3 stalks celery
3# sweet red cherry peppers
2 heads cauliflower

Brine:
1 qt. vinegar
2 qt. water
1 c. salt

Fill prepared quart jars w/veggies. Pour HOT brine over. Process in water bath as for pickles.

If you cannot find pearl onions, or cherry peppers, use the big ones and chop into 1 inch cubes. You can try this recipe with other types of peppers, just adjust it until you find the flavor you want.
