Recipe: Pineapple Cranberry Mousse (using Jell-o, blender or food processor)

PINEAPPLE CRANBERRY MOUSSE

1 (20 ounce) can crushed pineapple
2 packages (3 ounces each) raspberry gelatin
1 (12 ounce) pkg fresh cranberries
1 orange, sliced, unpeeled
1 1/2 cups sugar
2 cups sour cream
GARNISHES (OPTIONAL):
1 (8 ounce) can crushed pineapple, drained
Mint sprigs

Drain pineapple; reserve 1 cup juice. Heat reserved juice to boiling; stir in gelatin until dissolved.

Combine cranberries and sliced, unpeeled orange with sugar in food processor or blender. Chop to make a relish.

Combine cranberry mixture and pineapple with gelatin. Chill until slightly thickened. Fold in sour cream.

Pour into 2-quart mold. Chill until firm.

TO SERVE:
Unmold onto serving plate. Garnish with 8-oz can of crushed, drained pineapple and mint if desired.

Makes 10 servings
