Recipe(tried): Pimiento cheese

I have a similar problem with my Women on Missions group, they aren't very adventurous when it comes to food. Their idea of "finger foods" is pimiento cheese sandwiches and chips. I work with that, I make my pimiento cheese and they love it. The recipe can be used as a spread or a cheese ball:

Pimiento Cheese

Grated cheese
Pimiento, in the jar and drained
Mayonaise
Hot sauce (like Texas Pete)

I apoligize for not having exact amounts, my recipe seems to have walked off. I start with the cheese (this is where you will determine how much you want to make, 2 cups will make about 2-2 1/4 cups), add the pimiento (I usually chop it a little more than it comes in the jar) and hot sauce (a little goes a long way). Mix that well and then add mayonaise, about a Tablespoon at a time, until it is the consistency you want (a little creamier for spreading, a little thicker for the ball).

I am always accused of under-doing the mayonnaise and over-doing the hot sauce. You could make a ball and roll it in chopped pecans or parsley, or you could put it into a mold.
