Recipe: Savory Potato Patties

SAVORY POTATO PATTIES

4 cups seasoned mashed potatoes (can be made from instant)
1 tablespoon minced green bell pepper
1 tablespoon minced onion
2 tablespoons minced celery
2 eggs
Melted margarine

Mix potatoes with pepper, onion and celery. Beat eggs and add.

For each patty, drop 1/3 cup mixture on well-greased cookie sheet. Flatten slightly with back of spoon and drizzle with margarine.

Bake on highest shelf in preheated 450 degree F oven 15 to 20 minutes, or until browned. Serve at once.

Makes about 14 patties
