Recipe: Pineapple Rice Delight (cooked pudding, pineapple can label, 1960's)

1 2/3 cups undrained canned crushed pineapple
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1/2 cup heavy (whipping) cream
1 1/2 cups cooked rice
Combine undrained pineapple, sugar, cornstarch and salt.
Cook, stirring constantly, until mixture boils and thickens. Cool.
Whip cream stiff. Fold in pineapple mixture and rice. Chill thoroughly.
Makes 4 servings
