CRUMB TOPPED APPLE PIE
1/2 cup brown sugar
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon grated lemon rind
unbaked pastry for 1 crust 9 inch pie
6 apples peeled cored and cut in to chunks
1 tablespoon lemon juice
Crumb Topping (recipe follows)
cheddar cheese or a scoop of vanilla ice cream (optional, for serving)
Preheat oven to 450 degrees F.
Mix sugar, nutmeg, cinnamon, salt and lemon rind; set aside.
Line a pie plate with pastry and fill with a few apple chunks. Sprinkle on some of the sugar mixture and a bit of lemon juice. Add more apples, more sugar mixture and lemon juice. Continue until the pie pan is full. Making sure that the top layer of apples is liberally covered with sugar mixture. Sprinkle top with Crumb Topping mixture.
Bake 15 minutes at 450 degrees F. Reduce heat to 350 degrees for 30 minutes until crumbs are golden brown and apples sizzle.
Serve warm with cheddar cheese or a scoop of vanilla ice cream.

8 tablespoons cold butter (1 stick)
Combine sugar, flour, cinnamon and salt. Cut in butter by hand or in food processor until mixture is crumbly.
