Recipe(tried): Pinwheels (Tortilla Rollups)
Appetizers and SnacksA friend gave me this recipe many years ago and I've made several versions of this. Recipes are "springboards" to be used to make it "yours." Feel free to mix in left-over (cooked)chopped meat/chicken or top the mixture with shaved ham, etc., before rolling up.
PINWHEELS
1 pkg. (10) burrito size tortillas
FOR THE FILLING:
1 1/2 cups grated cheddar cheese
1 (8 oz.) pkg. cream cheese, softened
1 (8 oz.) container sour cream
1 (4 oz.) can green chilies
1/2 of a 4 oz. can chopped ripe olives
2 tablespoons chopped onion
garlic salt/seasonings (to taste)
salsa (for serving)
Mix all ingredients for the filling. Spread on tortillas to edges. Roll up; chill in fridge at least several hours.
Slice about 1/4 inch thick. Serve with salsa.
These will keep nicely in the fridge for several days. My friend said she cut them in half or thirds for her young children to have for snacks.
