HOMEMADE FRUIT LEATHER
"Making your own fruit leather is a great way to use extra fruit and gives you control over the ingredients."
2 cups fruit
2 tablespoons sugar
1 teaspoon lemon juice
Use fully ripe fruit. Clean fruit as necessary by washing, removing skin, pitting and chopping.
In a saucepan, combine the fruit with the sugar and lemon juice. Boil, reduce heat and simmer until fruit is softened.
Puree in a food processor or blender.
Line a cookie sheet with greased foil and pour puree to a 1/4-inch thickness. Dry in oven at 140 degrees F for 1-2 hours with oven door open 2-inches until leathery and non-sticky.
Store in refrigerator or freezer.
