Recipe: Sweet Potato Waffles (Sealtest, 1940)
Breakfast and BrunchSWEET POTATO WAFFLES
1 cup flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
4 tablespoons butter
1 egg
3/4 cup mashed sweet potatoes
1 cup milk
maple syrup (optional, for serving)
cooked sausage links (optional, for serving)
Mix and sift the flour, baking powder and salt. Add the melted butter to the slightly beaten egg yolk and add the sweet potatoes and milk. Stir into the dry ingredients, mixing just enough to moisten. Fold in the stiffly beaten egg white.
Bake on a hot waffle iron.
These are delicious served with maple syrup and sausages.
This recipe makes 4 large waffles
