Recipe: Spicy Couscous Soup (using Italian sausage and jalapenos)

SPICY COUSCOUS SOUP

9 ounces uncooked lean Italian turkey sausage links
2 teaspoons chopped jalapeno chilies
1/2 teaspoon ground cumin
2 cloves garlic, crushed
2 1/2 cups water
1 (10 1/2 ounce) can reduced-sodium condensed chicken broth
1/2 cup uncooked couscous
2 tablespoons chopped fresh mint leaves or parsley
1/4 teaspoon pepper
1 large tomato, seeded and chopped (1 cup)

Remove sausage casings by slitting casings lengthwise with knife. Cut sausages crosswise into 1/2-inch slices.

Cook sausage, chilies, cumin and garlic in 3-quart saucepan over medium heat about 8 minutes, stirring occasionally, until sausage is no longer pink.

Stir in water and broth; heat to boiling. Stir in couscous, mint and pepper; reduce heat. Cover and simmer 5 minutes. Stir in tomato.

Makes 6 servings
