Recipe: Polish Doughnuts

POLISH DOUGHNUTSIngredients~~~
2 cups warm water
1 teaspoon sugar
2 pkg. yeast
2 cups flour
4 egg yolks
1 whole egg
cup sugar
cup melted butter
1 Tablespoon grated orange or lemon rrind
1 teaspoon salt
5 cups flourMethod~~~
Combine warm water, sugar, yeast and flour and let stand
until bubbly.
Beat in flour and let stand to rise 30 minutes.
Beat egg and yolks until very light.
Add to the sponge with the remaining ingredients, saving 1 cup flour.
Stir until dough clears bowl.
Turn out on board covered with reserved flour.
Knead well, adding a little more flour if needed, for a smooth, waxy dough.
Place in a greased bowl, turning dough to grease top.
Let rise until doubled.
Turn out; knead lightly and roll out " thick.
Cut out and lay on waxed paper.
Cover lightly with a very thin cloth and let rise until doubled.
Fry in hot oil or shortening, turning once to cook both sides evenly.
Roll while still warm in sugar.

They are also good plain or when cooled, can be rolled in powdered sugar.
These are perfect for storing in freezer, tightly wrapped, for they never become soggy.
Makes about 5 dozen large donuts.
